The Mirror:
As of right now, the only way to set the mirror is to determine where to place the first sculpt. The ability to grab and adjust the mirror would be extremely helpful in sculpting.
Better Grid:
The grid at the current moment, while helpful in some cases, is still flawed. Being able to adjust how many degrees you could increment when rotating would help with aligning stuff. Another annoying thing about the grid is that when you press R1+triangle to re-align stuff, it will mess with the size of things too. The ability to control those two things independently would dramatically improve the grid system.
