Question 1:

I'm not too sure about this. What you could do is align the sculpt itself to the Grid. First you need to turn on the grid, then make the sculpt your grid origin (Hover and L1 + Triangle) and then grab the sculpt and press Triangle to align it.
Then your bolts should also line, because it will all be on the same grid plain.

That's one option. If you want a bit of an easier solution, I'd personally only use one bolt, half way down the door. Since it's hidden in play mode, your player won't know that you've only technically used one bolt, but since it's in the middle, it'll give a nice even opening to your door if it's positioned right. I hope that helps! :)

Question 2:

I can't think of an option to copy a finish/colour from one sculpt to the other.
You can pick colours by pressing the touch pad and using the colour chooser that appears on the screen - you can then touch anything with your imp to grab that colour.
