Before you start sculpting, make a mixed color in the color picker: put 2-4 shades and highlight colors into the mixer and give it a gentle spin. Now your sculpt will have some automatic variability. Experiment with loseness, fleck type, impasto, and roughness, as mentioned below to get additional variation.

Also you can build up textured surfaces by stamping pieces onto plain surfaces, grouping, and then cloning and turning.
