If you have the option to make it Unlisted, that means you’ve already Released the creation - which makes it Playable. Once a creation is released as Playable that version cannot be made Private.
If you want the creation saved as Private, you have to “Save a Version” rather than “Release” and when you view the creation settings if it’s Private it will say “Unreleased” and there will be no option to List/Unlist
Since the last update I have tested this using my alternate profile and I didn’t get any notification that my creations had been used or Remixed, nor did it show in the creations genealogy. So I can confirm that saving online as Private does work on a previously unreleased creation.
Again, that does not apply to something that was already Released as (and therefore made Playable) in the past
